help with VPN setup between sites with remote access at HO

I'm trying to setup a vpn between office (HO and remote office), there is a possibility of

more sites coming on later in the year.  Also we want to use QoS on the HO to shape the VoIP traffic in the tunnel.  The only data we want in the tunnel from the remotes sites are VoIP packets and RDP packets.  I've been trying to get this to work but cannot and would like to know if anyone can point me to a document or documents explaining how to set this up.  The routers are C1841 (HO) and C857w and possible C871.

Is there any harm in setting up the remote first then the HO or is better HO first then remote. Also I need to be able to have Cisco Client connect to the HO router.

My opinion is that you want to set up your central site first, since it tends to be more complex.  You may have multiple other devices, such as perimeter routers and firewalls, whose access rules have to be updated.  You will also need to provide routing to your remote sites from within your central site.
