Can I bundle two POS (with STM-16)between a 7609 (Router A) and 12010 (Router B)? If yes, can I use the bundling to carry layer2 VLANs (one VLAN from router A to B, another VLAN from router A to router C through router B)?

Not really. You do not bundle POS and is not common to carry VLANs across routers.
You mostly use switches and gigabit ethernet for this purpose.
