Can anyone tell me if it is possible to create 2 seperate DHCP pools on 2 subinterfaces. The reason I am asking is because I want to create a router on a stick with seperate DHCP pools. Thanks in an advance.

Yes, there is no problem with this. Either you can have separate ip helper-addresses under each subinterface or you can configure multiple DHCP pools on the router, one for each subinterface.
