If I have HSRP set up correctly - should I see requests coming from those routers only from the HSRP address?

Example

router1: 10.10.10.1

router2: 10.10.10.2

HSRP 10.10.10.3

If a router makes a request* - will it come from the 10.10.10.3 address?

I would assume I would see port 1985 traffic from the .1 and .2 addresses...

I do not understand your question. What kind of requests are you talking about the routers making?

But the shared IP address of HSRP is for receiving traffic and not for sending traffic. When the router originates traffic it will use its own interface IP address as the source and not the shared address.
