I'm trying to get the most bandwidth out of my p to p T1 circuit. Is there any reason why I should keep running EIGRP? Will going static increase my bandwdth?

In absolute terms yes you will have more bandwidth to use if you do not run EIGRP over the ptp circuit. EIGRP sends a hello message every 5 seconds, and updates as needed. So if you do not run EIGRP then you will not send these messages and will not use the bandwidth that they require. In practical terms the amount of bandwidth that EIGRP uses is very small and it will not enhance your applications very much if you save that bandwidth. You need to balance the benefit of saving this little bit of bandwidth against the benefit of knowing if the routes on the other end of the ptp circuit are really reachable or not. In my opinion it is not worth it. But it is your choice to make.

A routing protocol will not diminish your circuit speed. The low overhead (especially EIGRP) of a routing protocol is negligible.
