The 'legacy' way of configuring dial interfaces was to place the configuration under the actual physical interface e.g. you would directly configure dial parameters under the BRI or serial interface.

With dialer profiles, you use a logical interface (the dialer interface) which is not a real interface, but is where you configure your interface parameters. You then associate physical interfaces with the dialer interface using a dialer pool, which is basically a set of physical interfaces associated with a dialer pool.

The advantage of using dialer profiles is that the physical interfaces can be configured differently on a dynamic basis depending on whether it's an outoing or an incoming call etc... If you configured the physical interface directly, you would lose this flexibility.
