Hello,
Been looking around for documentation on how to setup a wireless solution or HotSpot for around 100+ customers. Is there a Cisco document that describes solutions as far as how many APs and what type of wireless control center and switches required for this type of setup.

You have to take a look at a Wireless Site Survey guide. This will give you a basic understanding of ap placement, etc.
When it comes down to what type of equipment to use, I guess it would depend on how many ap's and what the budget is. You can go with the IOS ap's with the Express model switches to the heavier costing WLC's, LWAP's and 3750 PoE switches.
Couldn't find a normal site survey guide, but here is one for the 7920 phones.... instead of surveying to -65dbm make it -72dbm.
