How many 3.5Mbps video streams can the C3750G-24TS handle?

Very very many.
As long you stay within a stack member, I think even the all-ports-gigabit gigabit version is wire-speed non-blocking. The one you have it is for sure.
When you go thru the cabling on the back that connects boxes, the bandwidth is 32 Gbps.

I need to aggregate and terminate approx. 200 multicast streams into three servers with optical gig interface so my plan was to stack the C3750G with a -12S.
I was told this switch family cannot do the job and should aim for the new C4500 instead.
So even going over the back plane, 200 streams would not overload a pair of C3750G?

200 streams = 700 mbps, so by far no.
Then you have the 3750e that have even more performance, but I don't think you need that.
To put it bluntly, if you don't need L3, you can do that with 29xx :)
